What is Doner?

“Döner” means “rotation” and “kebap” means “roast” or “roasted meat”. in Turkish and Döner Kebap refers to the practice of grilling meat that has been stacked on a skewer on a vertically rotating rotisserie grill. Originally, in the Ottoman Empire, rotisserie grilling was practiced horizontally over hot coals. Then in 1835 Hamdi Usta in Kastemonu tilted the kebap vertically, thus inventing the Döner Kebap.

It consists of thinly sliced, stacked cuts of meat, layered with fat and spices. Bits of the meat are sliced off as it continues to cook throughout the day, and can be made into sandwiches, wraps, topped on salads or arranged on a plate with other accompanying items like vegetables and sauces.

After earning his culinary degree from Owens Community College in 2012, Dave’s passion for gyros and naan sandwiches during his breaks at a bustling Toledo restaurant sparked the idea that would eventually become Naan Stop Kebap.

Inspired and encouraged by his former employer and friend, Dave embarked on a journey to master the art of döner kebab. Countless road trips and hours of research later, he crafted a menu that’s a true homage to this delicious, time-honored tradition. At Naan Stop Kebap, we’re all about delivering mouthwatering döner kebabs that will leave you craving more. Join us for a taste sensation that’s as dynamic and exciting as the food truck itself!

Chef Dave has worked in Toledo area restaurants for over 25 years, earning a culinary degree from Owens Community College in 2012. While working in a high-volume casual restaurant in Toledo, his breaktime meal almost always consisted of a gyro or sandwich on naan. During this handful of years, the idea that would become Naan Stop Kebap was born.

While planning the business, Dave was urged by his former employer and friend to research döner kebab. After several road trips and dozens of hours of research the decision was made to narrow the menu to focus almost exclusively on döner.
